2 pkgs. (10 oz. each) frozen chopped spinach, thawed and well drained.
1 (8 oz) container Chive & Onion Cream Cheese Spread
1/2 cup Ranch dressing (any brand will do)
2 eggs, lightly beaten
1 - 2 cups shredded cheddar cheese (I prefer Sharp)
1 cup crushed Ritz crackers, divided

Directions:

Preheat oven to 375º. Mix spinach, cream cheese spread, ranch dressing, eggs and 3/4 cup of the cheddar cheese in a large bowl. Stir in 1/2 cup of the crushed crackers. Spoon mixture into a greased 2 quart ovenproof casserole dish. Sprinkle with remaining 1/2 cup of crushed crackers and remaining cheese. (I mix crackers and cheese together before adding to top)
Bake 20-25 minutes or until heated through and cheese on top is melted.

For smaller serving, cut recipe in half. Be sure to squeeze your spinach dry to remove as much water as possible before adding to other ingredients.
