15 oz. ricotta cheese
2 tbsp. extra virgin olive oil
1 onion -chopped
2 large cloves
1 tsp. fennel seeds
1/3 c. tomato paste
1 16 oz. can tomato sauce
1 c. water
1/2 tsp dried rubbed sage and oregano
1 cup grated Parmesan
1 egg
16 oz. mozzarella
12 - 16oz. cooked ziti
1 lb. bulk italian sausage or ground beef

Directions:
Directions:
1. heat oil in large pan over medium-low
2. add onions, garlic, fennel seeds, and meat - cook until meat is done and onions are translucent
3. mix in tomato paste and cook for 1 minute
4. add tomato sauce, water, oregano, and sage
5. simmer until thickened, stirring occasionally (about 10 minutes)
6. preheat oven to 350º and grease a 9x13" glass pan
7. in a medium bowl combine ricotta and egg, add 1 3/4 c. of the mozzarella and 3/4 c. Parmesan (reserving rest for top)
8. assembly: spread 1/4 of the sauce and meat on bottom, next layer 1/3 of pasta, then drop 1/4 of the ricotta mixture by spoonful - continue layering and finish with sauce
9. top with 1/4 c. mozzarella and 1/4 c. Parmesan
10. baked covered for 30 minutes
11. uncover and bake until bubbling (10 minutes)

*can be prepared a day ahead
