1 lb. beef sirloin
1 T. flour
1/2 t. salt
2 T. margarine or butter
3 oz. can sliced mushrooms, drained
1/2 c. chopped onion
1 clove garlic, minced
2 T. margarine or butter
3 T. flour
1 T. tomato paste
1-1/4 c.beef stock or 10.5 oz can condensed beef broth
1 c. sour cream
2 T. dry white wine (optional)

Cut sirloin into 1/4 inch strips. Combine 1 T. flour with salt and coat meat. Heat 2T. butter in skillet, then add meat and brown quickly on both sides. Add mushrooms, onion, and garlic and cook 3-4 minutes until onion is crisp tender. Remove meat mixture from pan and keep warm. Add 2 T. butter to pan drippings; blend in 3 T. flour. Add tomato paste and stir in beef broth. Cook and stir over medium heat till thickened and bubbly.

Return browned meat and mushrooms to skillet. Stir in sour cream and wine. Cook slowly until heated through. Do not boil. Keep warm over hot water if necessary. Serve over hot buttered noodles or rice.
