2 cans red enchilada sauce
2 packages large size flour tortillas
1/4 cup sour cream
1 1/2 pounds ground beef
shredded cheese

Directions:
Directions:
Brown meat in skillet. When meat is done pour out some of the grease. Then add 1 can of enchilada sauce, sour cream, and small handful of cheese (about 1/4 cup). Stir until the sour cream melts. Turn burner off. Begin filling 10-15 tortillas with beef mixture and place in a 9x13 (or larger) baking dish. I leave the ends open like a taquito when I wrap mine. Pour second can of sauce over all of the enchiladas and spread around with a spoon. Top with cheese.
Bake at 350º for 10-12 minutes or until the cheese is melted.
