1/2 c. red onions
1/2 bunch chives
5 tbsp. balsamic vinegar
1/2 tsp. dried thyme
2/3 c. extra virgin olive oil
3/4 lb. mushrooms - chef's choice
salt and pepper to taste
radicchio and mixed greens - also chef's choice

Directions:

1. chop mushrooms
2. thinly slice red onion and chives
3. whisk balsamic, EVOO, and thyme together to make the dressing (salt and pepper if needed)
4. toss mushrooms with 1/4 - 1/2 of the dressing
5. roast mushrooms @ 400º for 20-30 minutes in shallow baking pan
6. let mushrooms cool
7. toss mushrooms, onions, chives, lettuces, and remaining dressing to serve
