Small chicken boiled and deboned
3 c. flower
3 beaten eggs
1 tsp salt

Directions:
Directions:
Boil chicken until it can be picked off the bone, leave in pan and set aside.
Put flour in medium bowel and make a well in the center of the flour. Pour beaten eggs in the flour well. Mix egg, flour and salt together until it forms a ball. Knead the dough and flatten out and roll until dough is thin on floured mat. Add small amount of water if dough becomes to dry and unable to roll. Roll up dough into a log. Cut small slices, 1/8 " from one end of the log roll through the entire roll. Pick up the noodles until they fall out into long pieces. Let noodles dry for approximately 8 hours on the mat. Add to boiling water and chicken pieces and cook until noodles are done.

This is mom's special homemade noodles that were enjoyed by all. She did not write this recipe down so it is written as I remember mom telling me many of times.
