l lb. ground chicken
1/2 c medium onion (chopped)
2 tsp. garlic (finely chopped)
3 c chicken broth
1 1/2 tsp. dried oregano leaves
1 tsp. ground cumin
1/8 - 1/4 tsp. ground red pepper
2 medium zucchini (chopped)
2 cans (15 oz.) cannelini beans or 2 cans great
northern beans, drained and rinsed
1 c (4.5) chopped green chilies
1/2 c shredded reduced-fat Monterey Jack Cheese

1. In 4-5 qt. saucepan cook ground chicken, onion and garlic over medium heat 5-7 minutes, stirring constantly until chicken is no longer pink.
2. Stir in all remaining ingredients except cheese.
Heat to boiling and then reduce heat, cover and simmer 10 minutes stirring occasionally until zucchini is tender.
3. Remove from heat; stir in cheese until melted and serve immediately.
