1c. of beans
6 strips of bacon
1 c. chopped tomatoes
1 c. chopped onions
1/2c. chopped cilantro
1tbsp. Salt

Directions:
Directions:
Gently boil 1 c. beans in 21/2 c. water for 1-2 hrs. or until tender. Chop bacon and fry in a separate pan. Remove grease form bacon and pan with using a paper towel. Add cilantro, onions, tomatoes, and bacon to tender beans and boil for for an additional 10-15 minutes. Serve as a side dish or a soup.

You can use any type of bean for this recipe. I prefer Peruvian beans because of their light color and taste. Enjoy!
