Directions:Sounds simple right? It can be but you have to have a few rules and tricks that really make it work. Put your flour into your bowl. Put your shortening into the bowl with the flour. The very best way to make a good pie crust is to spend the money and buy a pastry blender.....they work SO much better than a fork and they really aren't expensive. Blend your flour and shortening until it is like little peas in the bottom of your bowl. This step can be worked as long as you need. The next step has a time and handling restraint. Get a bowl of water and put ice cubes in it.....I can't stress how much you need the water to be ice cold. Add about 3 tablespoons of the water and just fluff with a fork. If it looks like it's gonna stick together at 3 tablespoons then go with it....if it doesn't, add the 4th. Don't mix long. Just enough to get the peas to stick together. Roll it out onto your floured surface and then roll with a rolling pin until it will fit about 1/2 inch past the sides of your pie pan. Fold in fourths and put in the pie pan and unfold. Press it into the bottom of the pan and crimp edges. Don't over work that last step, it will just make your crust tough and chewy. The secret to good pie crust is to keep practicing......you'll start to know what it should look like and feel like. |
