1 lb. penne pasta
3T. butter
1c. freshly grated Parmesan Cheese (not the one in the green container)
1/2 c. ricotta cheese
1/2 c. grated Vermont Sharp White Cheddar (Cracker Barrel)
1 1/2 c. heavy cream
Pinch of nutmeg
Pinch of seasoned salt
Good pinch of WHITE pepper
Pinch of cayenne pepper

Directions:

Cook pasta until al dente. Drain and rinse with cold water. Put back in pan (or large bowl) and toss pasta with butter then the 3 cheeses and toss well. Next, combine the cream, nutmeg, salt, and peppers. Mix well and pour over pasta and gently stir to coat. Put pasta into a buttered casserole. Bake at 400º for about 20 minutes or until lightly browned.
