6 T olive oil
1/4 cup butter
3 large cloves garlic, mashed
16 sprigs of fresh parsley
1/2 tsp. fresh ground black pepper
1/2 tsp. salt
6 cups whole canned plum tomatoes
1 tsp. dried oregano
8 anchovy filets, chopped
2 heaping T tomato paste

Directions:
Combine olive oil and butter in bottom of heavy bottom pan and heat. Chop garlic and parsley together and add to pan. Cook slowly for 5 minutes, then add salt and pepper. Drain the tomatoes and chop into chunks. Add the tomatoes and oregano to the sauce. Cook slowly for 30 minutes, then add the anchovy and tomato paste, stir well and remove from heat. Re-season with salt (remember however that anchovies are salty) and pepper. Serve over pasta along with green beans and hard cooked eggs.
