1 mango, peeled, seeded and diced
1 avocado, peeled, pitted and diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 tsp. salt
2 tbsp. fresh lime juice
1/4 cup chopped red onion

Directions:
Directions:
In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro and garlic. Stir in salt, lime juice, and red onion. May need a little olive oil and maybe spash of red wine vinegar. Refrigerate for about 30 minutes before serving. Great with tortilla chips.

Sometimes I dice up cucumber and add it; you can also add a can of drained and rinsed black beans and a can of corn to it. I also found that roma tomatoes work best with this salsa (not as many seeds).
