Texas Sheet Cake Recipe

2 c. cake flour (or 1 3/4 c. all-purpose)
2 c. sugar
1/2 tsp. salt
1 tsp. baking soda
2 eggs
1/2 c. sour cream
2 cubes (1 c.) margarine
1 c. water
4 T. cocoa

Frosting:
1 lb. box powdered sugar
1 tsp. vanilla
1 c. chopped walnuts
1 cube margarine (1/2 c.)
6 T. milk
4 T. cocoa

Directions:
Directions:
Combine the first 6 ingredients. Bring the margarine, water, and cocoa to a boil and add at once to the flour mixture. Mix well and pour into a greased cookie sheet (with sides). Bake at 350º for 20 minutes. (The cookie sheet should be about 17 1/4" by 11 1/2" by 1")
For the icing, combine the powdered sugar, vanilla, and walnuts. In the same sauce pan you used to boil the ingredients for the cake, bring the margarine, milk and cocoa to a boil. Add at once to the powdered sugar mixture. Ice the cake (still in the cookie sheet) right out of the oven and cool a cake rack.on

This recipe came from Jan Collier, one of the busiest women I have ever known. She says, "This is a recipe that any busy mother who has to take things to kids events MUST have. From beginning to end, it takes about 30 minutes. Use the same pan for mixing everything on the stove. Oh yes, and it is also delicious!"
