1-6 oz. jar marinated artichokes with liquid
1 medium onion chopped (1 cup)
1 clove garlic minced
½ pound sliced fresh mushrooms
5 large eggs, beaten
¼ tsp. basil, marjoram, salt and pepper
1 cup shredded mozzarella
2 Italian sausages-skinned, browned, crumbled and drained
1- 10oz. frozen chopped spinach thawed and drained
1 cup Parmesan

Butter quiche pan or 10” pie pan. Drain artichokes, but save 1 T. marinade. Dry hearts. Sauté onion and garlic in marinade for 5 minutes. Add artichokes for 2-3 minutes. Combine all up to spinach in mixing bowl. In the baking dish distribute sausage, spinach and on top vegetables. Pour egg and cheese mixture over all. Sprinkle with Parmesan.
Bake 350 degrees for 35 minutes. Insert knife to check for doneness. Stand 5-10 minutes. Cut into wedges.
