Hog’s Breath Venison Chili Recipe

½ cup olive oil or butter
1 ½ pound yellow onions, chopped
2# hot Italian sausage
1 ½ tsp. Pepper
4 pounds beef burger
4 pounds deer burger
3 T. minced garlic
3 oz. Ground cumin seeds
4 oz. Chili powder
3 cans dark kidney beans
½ cup Dijon mustard
2 oz. Tabasco sauce
4 tsp. Salt
4 tsp. Basil
6 pounds canned tomatoes (Italian Plum)
½ cup burgundy wine
¼ cup lemon juice
½ cup chopped parsley

In a very large pot, sauté onions in olive oil, drain off oil. Add beef, venison, sausage and brown. Drain fat. Add the rest of the ingredients and simmer at least 4 hours. Usually make ¼ batch.
