2 C sugar,
1 C margarine,
6 very ripe bananas, mashed,
4 eggs, well beaten,
2 1/2 C cake flour (or just a bit less regular flour), 1 tsp salt,
2 tsp baking soda,
Optional: 3/4 C chopped walnuts

Directions:
Directions:
Cream sugar and margarine with electric mixer.
Add mashed bananas and beaten eggs.
In a separate bowl, sift dry ingredients three times.
Add dry ingredients to banana mixture using wooden spoon or spatula (NOT electric mixer).
Stir in chopped nuts, if desired.
Spoon batter into lightly greased pans. If using small pans, fill half to two-thirds full. Place in preheated oven at 350 degrees for 55 minutes, or until toothpick tests dry to center of loaf.
Turn out immediately onto cake rack to cool.
