2 eggs
3 T cooking oil
1/2 C diced onion
1/2 C diced green pepper
1/2 C frozen sweet green peas
1 C cooked meat, poultry, or shrimp
3 C cooked rice
1/4 C soy sauce, preferably low sodium
1 tsp chili-garlic sauce
Optional: sliced scallions and chopped almonds

Heat 1 T oil in large skillet. Add 2 large beaten eggs and softly scramble. Remove from skillet, chop, and set aside.

Heat 2 T oil in large skillet. Add diced onions and green pepper. Stir fry for 3 minutes.

Add chopped meat and peas. Stir fry for 2 minutes.

Add rice, soy sauce, and chili sauce. Stir fry 3-4 minutes or until thoroughly heated.

Add scrambled eggs and garnish with onions and almonds, if desired.
