16-oz package of egg roll wrappers

1 16-oz package broccoli slaw mix
1 cup finely chopped cooked meat, poultry, or shrimp
1 1/2 T minced fresh ginger
2 garlic cloves, pressed and diced
1 tsp seasoned pepper
1/2 tsp salt

Mix all filling ingredients together.
Place one wrapper in front of you in diamond fashion.
Spoon 1/4 c filling in center of wrapper.
Fold bottom corner over filling, tucking lower diamond tip under filling.
Fold left and right corners over filling.
Wet sides of top corner (triangle) with water or water/egg mixture, then tightly roll filled end toward wet corner, pressing to seal.
Place egg roll on a cookie sheet and cover with a towel to avoid drying out. Make remainder of egg rolls.
Pour oil to a depth of 3 in in a Dutch oven or deep fat fryer and heat to 375 degrees.
Fry egg rolls in batches for 3-4 minutes.
