9 baking potatoes
2/3 c butter
2/3 c all-purpose flour
6 c whole milk
½ T salt
1 tsp black pepper
½ c bacon bits
1-2 green onion (chopped)
5 oz shredded cheese
8oz container sour cream

* extra bacon bits, chopped green onions & shredded cheese for toppings

Directions:
Directions:
Peel and dice potatoes. In a large saucepan or boiling pot, boil until slightly tender (not mushy). Drain water from potatoes.

In a medium saucepan, melt butter. Stir in flour and cook about a minute, stirring continuously. Whisk in milk, a little at a time, stirring constantly until thickened.

Add salt, pepper, bacon bits, green onions and shredded cheese.
Mix well. Stir in potatoes.

You may stir in sour cream and heat through. Once heated it is ready to serve. Otherwise, you can, use the sour cream as a topping.

Top soup with additional cheese, bacon bits, and green onions. May also top with sour cream if not added to soup at the end of cooking cycle. Enjoy.
