Stuffed Zucchini Recipe

4 zucchini
2 tbs oil
1/4 c butter
2 med onions-chopped
1 clove garlic
1/4 lb Italian sausage
1/2 lb ground beef
1/2 tsp ea salt & pepper
bread crumbs
1/4 c milk
1/4 c mozzarella cheese
tomato sauce

Clean zucchini. Parboil whole zucchini in boiling salt water @ 8 min. Drain and cool. Cut lengthwise in half. Scoop out some of pulp and set aside. Brown onions, garlic, sausage, beef, salt and pepper @ 15 min. Add bread crumbs, milk & zucchini pulp. Stuff zucchini shells. Top with mozzarella cheese and tomato sauce.

Bake 325 for 20-25 min.
