8 chicken cutlets
2 tsp grated ginger
2 tbs cornstarch
2 tbs water
scallions
2 tbs soy sauce

Directions:
Directions:
Cut chicken into bite sized pieces. Mix all ingredients except scallions in bowl. Cover and refrigerate 4 hours.
In fry pan pour a mixture of sesame oil and peanut oil.Saute chicken, a small amount at a time, until it turns white. Add scallions and saute about 2 addl minutes. Serve over rice.
