1 pound ground turkey, chicken or beef
1 T. vegetable oil
1 c. onion, chopped
1 package taco seasoning mix
1-1/2 cups (total) green peppers, red peppers and hot peppers
2 c. salsa, divided
1 package (10) flour tortillas
2 c. grated cheddar cheese, divided

Preheat oven to 375 degrees. Grease a 9 x 13 baking dish. Heat vegetable oil in large skillet over medium heat. Add ground beef, turkey, or chicken; cook, stirring occasionally until no longer pink; drain. Stir in onion, peppers, and seasoning mix. Reduce heat to low, stirring occasionally for 3-4 minutes or until vegetables are slightly tender. Spread 1/2 cup salsa over bottom of prepared baking dish. Cover with 5 tortillas. Spread with half meat mixture and 1/2 cup salsa. Sprinkle with 1 cup cheese. Repeat with remaining ingredients. Bake for 15 to 20 minutes or until heated through and cheese is melted.
