5 c potatoes, generous cups
3/4 c butter or margarine
3/4 c flour
2 c half and half
2 c milk
1/2 lb bacon
salt & pepper

Directions:
Peel and cube potatoes. Cover with water and cook until tender. 15-20 minutes. DO NOT DRAIN
Melt together margarine & flour, stir until smooth. Slowly add milk and half & half. Cook until thick and smooth. Combine white sauce with undrained potatoes. Fry bacon & crumble into soup, salt & pepper to taste. Note - I use this same white sauce to make a broccoli soup, and add a can of cheddar cheese soup to give it a little extra flavor. When you add the white sauce to the potatoes, make sure the water in the pan just covers the spuds, you can add more water if needed to thin the soup.
