2/3 cup Panko bread crumbs
2 tbsp. minced shallots
4 tsp.olive oil
1 tbsp. minced fresh tarragon or 1 tsp. dried, crumbled
1/4 tsp. salt
1 pound turkey meat
Freshly ground pepper

Olive Oil
Sliced Gouda or other cheese
Red onion slices

Directions:
Directions:
Mix first 5 ingredients in medium bowl. Add ground turkey and generous amount of pepper. Form mixture into 4 patties. Pour thin layer of oil into heavy medium skillet over medium heat. Add patties. Cover and fry until just cooked through, about 3 minutes per side. Top each patty with cheese. Cover and cook until just melted. Transfer to plates. Top with onion slices and serve.

Add extra shallots if you like onion taste. I like turkey cooked through so I add a couple of extra minutes per side.
