2 1/4-oz pkgs active dry yeast
4 1/2 to 5 cups flour
1/2 cup sugar
1 tsp salt
1/2 cup milk
1/2 cup water
3/4 cup butter
2 eggs, slightly beaten

Directions:
In large electric mixer bowl, blend together the yeast, 1 3/4 cup flour, sugar and salt. In a saucepan heat the milk, water and butter until very warm (120º-130º) Butter does not have to be completely melted. Add warm liquids to the yeast-flour mixture. Beat 2 min. with mixer set to medium speed, scraping bowl occasionally. Add 1/2 cup flour and eggs. Beat 2 min. more with mixer set on high speed, scraping bowl occasionally. Add enough additional flour to make a soft, manageable dough. Turn dough onto a lightly -floured board: cover: let rest 10 min. Knead until smooth and elastic, about 5 min. place in greased bowl; bring greased side up: cover* let rise in a warm place until doubled, about 1 1/2 hours. Punch down: cover; let rest 5 min. then proceed to shape into desired rolls or coffee cakes following direction on specific recipes.
