1 c currants
1 c light brown sugar
Butter size of an egg (about 1/3 - 1/2 c)
2 eggs
vanilla
nutmeg
maple syrup about 1 tbls.

Directions:
Directions:
Melt butter, add sugar and stir until all lumps are eliminated. Add the rest of the ingredients and stir well. Put into pastry-lined tart shells. Bake 375º for 15 minutes.

If currants are dry and kind of hard, plump them as follows:
Put into shallow pan and sprinkle with water. Cover and put into low oven 275º until plumped.
Cool to lukewarm before using.

You can make tarts with raisins--some prefer them)
