1 chicken fryer
1 large sweet onion
2 tsp. salt
2 tsp. paprika
3/4 tsp. cayenne pepper
1/2 tsp. onion powder
1/2 tsp. thyme
1/4 tsp. white pepper
1/4 tsp. garlic powder
1/4 tsp. black pepper

Directions:

Night before:
Mix all spices
Rub entire chicken inside and out with the spices (I recommend using rubber gloves as the spices will make your hands burn a little).
Put in Gallon ziplock bag and refrigerate overnight.

Next Day:
Slice onion.
Stuff chicken with sliced onions.
Roast uncovered at 250º for 5 hours.
Baste occasionally with drippings.
Slice and serve,
I like to pour some of the drippings over the sliced chicken before people serve their plates to keep it nice and moist.
