1 Tbsp. olive oil
1 medium onion, chopped small
1/2 cup dry mushrooms
1 and 1/3 cups brown rice
1/2 cup white wine
3 cups reduced sodium chicken broth
black pepper and salt

Directions:
Directions:
Heat oil in a large saucepan or small dutch oven. Add onion and saute until caramel brown (about 5 minutes). Stir in mushrooms and rice. Add white wine, then chicken broth. Cover and bring to a boil. Reduce heat to low and continue to cook, covered until broth evaporates and rice is tender, about 45 minutes. Remove from heat and let stand for 5 to 10 minutes. Season to taste with pepper and salt if necessary
