1 c. finely chopped onion
1 c. finely chopped celery
1 medium head cauliflower cut in small pieces
3/4 c. margarine
3/4 c. flour
1 1/2 tsp. salt
2 c. milk
2 c. half & half
2 c. grated cheese
pepper

Directions:
Directions:
Cook onion, celery and cauliflower until tender in just enough water to cover it. Mash - do not drain.

Make sauce by melting margarine, add flour and cook 2 to 3 minutes. Add milk and half & half, salt & pepper. Cook until thick. Add vegetables and cheese. Makes approximately 10 cups. Vegetables may be cooked in 2 cups of chicken broth, if desired. You may also use broccoli for cauliflower.
