2 c. self-rising cornmeal
1 T. sugar
1 large egg, lightly beaten
1 3/4 c. buttermilk
1/4 c. vegetable oil

Directions:
Directions:
Combine cornmeal and sugar in a large bowl; add egg, buttermilk, and oil, stirring just until dry ingredients are moistened. Place a well-greased 9 inch cast iron skillet in a 450º oven for 5 minutes or until hot. Remove from oven; pour batter into hot skillet. Bake at 450º for 23-25 minutes or until golden.

Mother made cornbread with her veggie summer lunches. Daddy liked his cornbread. This recipe is from Southern Living cookbook because not quite sure if mother followed a recipe.
