TO MAKE AHEAD DRESSING AND FREEZE
Cook & drain well 1/2 lb bacon, cook until very crisp and blot dry. Crumble and freeze. Drain off almost all of the bacon fat, leaving crispy bits in the pan.
Add enough oil to make 3 tblsp full.
Saute 1/4 cup of finely chopped onion until soft, not browned. Add a bit more oil to again have 3 tblsp full and add 3 tblsp of flour.
Stir until smooth and add slowly
1/2 cup white vinegar
2 tablespoon balsamic vinegar or wine vinegar
1 cup beef broth (canned low fat) 1/3 cup sugar
3 teaspoon salt, (try a bit less and add all if needed) 1/2 teaspoon black pepper
1 teaspoon dry mustard
1 teaspoon celery seed
cook until thickened.

At this point dressing can be held for day in refrigerator or freeze for longer.

To assemble, slice 2 1/2 TO 3 pounds of boiled potatoes.

Warm to warmed dressing. Add 1/4 cup chopped mild onion, crumbled bacon and parsley (about 1/4 cup chopped fine). If it seems to thick add a bit more beef broth.
