16 medium Green Tomatoes
6 Green peppers
6 Sweet Red peppers
6 medium Onions
1 medium Head of Cabbage
6 cups white Vinegar
2 ½ cups Sugar
1 ½ teaspoon Turmeric
1 teaspoon powered Ginger
2 tablespoon Mustard Seed
¼ cup Pickling Salt
1 tablespoon Celery Seed
2 teaspoon Prepared Mustard
1 tablespoon Mixed Pickling Spice (tie in a cheesecloth)

With a sharp knife, coarsely chop all the vegetables. Combine and mix with the salt. Let stand overnight. Stirring occasionally. The next morning, stir well, drain, discarding the liquid. Put the prepared mustard in a large kettle and gradually blend in the vinegar, sugar, turmeric, ginger, mustard seed, celery seed. Simmer for approximately 20 minutes. Strain. Then add the chopped vegetables and the spice bag. Simmer for another 30 minutes. Remove the cheesecloth spice bag. Pack the vegetables immediately in clean hot jars, leaving ¼ head space. Be sure the liquid covers the vegetables in the jars. Seal. Process in a boiling water bath for 20 minutes. Remove and allow to cool.
