1 large can pineapple chunks, drained
1 cup grated cheese, mild cheddar
1 stick butter or margarine
3/4 cup sugar
3 Tbls self rising flour
1 tube Ritz crackers, crumbled

Directions:
Directions:
Add pineapple and cheese in a casserole dish, mix well.
Combine juice, sugar and flour in saucepan and bring to a boil. Boil for a couple of minutes or until thickened. Stir constantly.
Pour over pineapple/cheese mixture.
Sprinkle with Ritz crackers.
Thinly slice butter and spread evenly over crackers.
Bake at 350 degrees for about 25 minutes.
Serves 8.
