1 medium eggplant
1 medium zucchini
6 medium tomatoes, chopped
1 small onion chopped
1 clove garlic, crushed
1 tpsp. chopped parsley
1 bay leaf
Olive oil
Salt & pepper

Directions:
Directions:
Peel and cube eggplant and zucchini, add to boiling water and cook for 10 minutes, drain well. Coat a large saucepan with olive oil, cook onion and over medium to high heat until browned, add garlic, bay leaf, parsley and salt and pepper to taste. Cook until vegetables are tender (about 20 minutes). Place in a shallow serving dish and sprinkle with Parmesan cheese.
