Vietnamese Fried Noodles Recipe

15 oz dry noodles
2 T. soy sauce
1 and 1/2 T. sesame oil
1/4 cup pork, shredded
1/2 T. soy sauce
1 tsp. cornstarch
1/4 lb. shrimp
1 tsp. cornstarch
1/4 tsp. salt
2oz. can bamboo shoots
17 oz chicken stock
2 T. cornstarch blended with 2 T. water
2 oz spinach cut into 1 inch length
1 scallion diced
10T. vegetable oil
Directions:
Directions:
Mix pork, 1/2 tsp. soy sauce and 1 tsp cornstarch and marinade. Mix Shrimp, 1 T. cornstarch and 1/4 tsp. salt and set aside. Bring pot of water to boil. Add noodles and cook for 3 minutes and remove and plunge into cold water, drain well.
Add 1 T. soy sauce and 1 T. sesame oil to noodles and mix well. Heat 4 T. cooking oil in pan and add noodles and fry until the underside is brown (about 3 minutes). Turn noodles over; add 2 T. oil around the edges and fry until the otherside is browned. Heat remaining cooking oil in pan and stir fry pork shreds until color changes, drain into pan and set aside. Reheat the oil and stir fry shrimp until pink, Add bamboo shoots, chicken stock and remaining soy sauce. Bring to a boil and thickens with cornstarch paste. Mix in spinach, scallion and fried pork shreds. Add remaining sesame oil and dish up over fried noodles and serve immediately.
