1/3 c onion, chopped
1/4 c green pepper, chopped
1 c regular rice
2 tbsp bacon drippings
2 c beef broth
1 tbsp Worcestershire sauce
3/4 tsp salt
3/4 tsp cumin seed

Directions:
Directions:
Preheat oven to 350º Fahrenheit.

Saute onion, pepper and rice in bacon drippings over medium high heat until rice is golden brown, stirring frequently to avoid burning.

Pour mixture into a shallow 2 quart casserole dish and add broth, Worcestershire sauce, salt and cumin seed. Stir well.

Cover tightly with lid or foil (or both) and bake for 30 minutes or until rice is tender and liquid is absorbed. Fluff lightly with a fork.

I had this rice at Clarisse and Harold's when they first moved to Robstown. I can't remember how long ago it wa or the last time I was in their home. It is amazing how close we can live to one another and see each other so little. I must have liked this rice or I wouldn't have asked for the recipe. It is a quick and easy side dish.
