2 cups cooked diced chicken or turkey
1 cup chopped pared apple
1/2 cup chopped onion
1 cup sliced celery
1 cup sliced fresh mushrooms
1 Tbsp (or more) curry powder
1 cup milk
1 cup light cream
1 cup chicken or beef broth
2 Tbsp cornstarch
2 Tbsp cold water
1 Tbsp butter or margarine
1 tsp salt
optional condiments such as chutney, raisins, coconut, chopped cucumber, peanuts

Directions:
Directions:
Cook curry powder and butter in pan for 1 minute. Add apple and cook until soft, Stir in onion, celery, mushrooms. Add beef broth, bring to boil. Cook until celery is soft. Combine cornstarch with cold water, add with milk and cream to the pan. Cook and stir until mixture thickens. Stir in chicken. Add salt. Serve with cooked rice. Garnish with your choice of the optional condiments.
