1 can Campbell's Cream of Shrimp soup
1 lb of fresh deveined shrimp*
*(I use the peeled frozen shrimp-must be product of Louisiana - Gulf shrimp)
3/4 stick of butter
1/4 cup green pepper*
1/4 cup chopped onion*
1/4 cup chopped celery*
*(Note: I buy the pre-chopped creole seasoning and use about a cup of that)
Tony Chachere's Cajun Seasoning
Rice ( I only use Uncle Ben's Converted Rice)
Chopped green onions

Directions:
Directions:
Heat butter in skillet and then add chopped vegetables and cook until tender.Sprinkle shrimp generously with seasoning. Add shrimp and cook about 3 - 5 minutes until the shrimp are pink. Add soup and 1/2 can of water. Mix thoroughly and heat through.
Serve over rice - garnish with green onions

Ok! I know fresh shrimp are better but I like fast and easy! I also hate chopping vegetables so I buy them already chopped! You, of course, can do as you like! I also cheat when I cook my rice. I rinse it in a colander so it won't stick. Lucinda taught me that! :) This actually is a pretty tasty dish. Remember you can always add more butter and more shrimp, especially if cooking for the Ruli's because they pick out all the shrimp! You can never have too many!
