4 large Portabella mushroom caps
1/4 cup balsamic vinegar
2 T. olive oil
1 tsp. dried basil
1 tsp. dried oregano
1 T. minced garlic
salt and pepper to taste
4 (1 ounce) slices of reduced fat provolone cheese

Directions:
Directions:
Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt & pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.

Preheat grill for medium-high heat.

Brush grate with oil. Place mushrooms on the grill, reserving marinate for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling. I actually broil these in the oven. Takes about 5 minutes per side.

Serve on light buns with lettuce, tomato and whatever other condiments you like.

So Todd goes and has a heart attack and I have to revamp my ways of cooking!! After poking around on the internet for new ideas, I came across this recipe. Todd loves mushrooms, so I thought I would give it a whirl. He found them to be rather tasty and this has become one of his new favorite recipes to keep his heart healthy!
