3 large eggs, separated
1 2/3 c. milk
2 1/2 c. fresh corn kernels
1 1/2 c. bread crumbs
1 1/4 c. shredded cheddar cheese ( 5 oz.)
1 rib celery (optional)
1/2 chopped onion (3/4 c.)
3 Tbsp. butter melted
1/2 tsp. salt
Paprika for sprinkling

Directions:

Grease 2 1/2 qt. casserole dish. Preheat oven to 350º. Beat the egg yolks and milk for 1 - 2 minutes. Mix in corn, 1 c. breadcrumbs, 3/4 c. of cheese, celery, onion, butter, and salt. Fold in stiffly beaten egg whites into corn mixture and pour into casserole dish. Top with remaining 1/2 c. cheese and 1/2 c. breadcrumbs, sprinkle with Paprika. Bake until puffed and golden, about 45 minutes.
