Personal Notes:
Well, this was a staple in our house...especially during the "Western Auto" years. It is a very simple recipe that I could make on my own and the boys would eat! I have fond memories of this recipe. It's "new" name of "Where's the Chicken?!? Chicken Enchiladas" happened because in preparing for this cookbook I was reminiscing with a friend of mine, Tamara Moore, and I was telling her the recipe and she burst out laughing when I said the first ingredient...hamburger meat...she has teased me endlessly since then about this recipe! I probably won't like this recipe nearly as much now as I did when I was 12 year old...but, it still holds a special place in my heart and memories!
