1 medium bell pepper, chopped
1 small onion, chopped
1 tbsp oil
1 cup white rice
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cumin
1/4 tsp chili powder
1/8 tsp cayenne pepper
1 can diced tomatoes

Directions:
Directions:
Saute bell pepper and onions in oil over medium-high heat until onion is translucent. Add rice and cook until ightly browned. Add salt, pepper, cumin, chili powder and cayenne pepper and mix well. Add tomatoes and water equivalent to 2 cups total volume. Turn heat to low, cover and cook until all liquid is absorbed, approx. 40 minutes.
