I lb or so of lean ground beef
a small onion chopped
mashed potatoes - you can use instant or make your own
2 cups of sharp cheddar cheese
seasoning of choice for meat - I use Tony Chachere's
salt
pepper
butter

Directions:
Directions:
Pre-heat oven on 350 degrees. Saute onion in 2 T of butter until tender then add seasoned ground meat and brown - drain grease then pour into a casserole dish. Top with mashed potatoes then cover with cheese. Bake in oven for about 10 to 20 minutes until warmed through and cheese melts and becomes bubbly on top. You may want to put it under the broiler to crisp the cheese a little (warning - watch closely or it will burn!) Let sit a few minutes before serving!
