1 bag Tyson diced cooked chicken (1lb.)
1 T. butter
2 tsp. Fiesta brand fajita seasoning
4 large cloves of garlic minced
handful of cilantro finely chopped
1 large red onion chopped
1 small can of green chillies
1 8 oz. tub of whipped cream cheese (room temp.)
1 lb. 2% Velveeta cheese cubed
2 (14.5 oz) cans of chicken broth

In saucepan over medium heat combine butter, chicken, garlic, onion, and cilantro. Toss fajita seasoning and chicken mixture until chicken is well coated. Heat for about 1 minute and then add 1/2 can of chicken broth and cook over medium heat for about 5 more minutes. Add cream cheese, cubed velveeta, and rest of broth. Mix well. Cook on medium heat until cream cheese and velveeta are melted and mixture is heated thoroughly while stirring frequently.

Crumble tortilla chips over top for some added texture. You can also use leftovers to make some yummy nachos. Another good idea is to leave out the chicken and have a really great queso dip.
