Blend until just mixed cook as directed. Serve with jelly or syrup. Mere likes to melt butter in the pancake syrup.

Uncle Freddy came up with this recipe while on a family vacation to Hilton Head. We were leaving the next day and trying to use up what Mere had in the pantry and fridge. There was pancake mix... but no milk.... NO PROBLEM ! Fred melted vanilla ice cream ..Delicious!!
