Ingredients: 2 celery ribs, thinly sliced 1 medium onion, chopped 1 package (16 ounces) dried green split peas 9 cups water 1 package (14 ounces) smoked turkey kielbasa, halved and sliced 4 medium carrots, halved and thinly sliced 2 medium potatoes, cubed 1 tablespoon minced fresh parsley 1 teaspoon dried basil 1 1/2 teaspoons salt 1/2 teaspoon pepper

Directions:In a soup kettle or Dutch oven coated with cooking spray, cook celery and onion until tender. Stir in split peas and 6 cups of water. Bring to a boil. Reduce heat; cover and simmer for 25 minutes.
Stir in the kielbasa, carrots, potatoes, parsley, basil, salt, pepper and remaining 3 cups water. Return to a boil. Reduce heat; cover and simmer for 20-25 minutes or until peas and vegetables are tender. |

Notes: I first made this soup Christmas 2008 in Boerne while in the midst of a "cooking frenzy"! I have always loved split pea soup but was always daunted by the whole "boil the ham hock and de-bone it" thing! This is so easy and it is delicious! I have since sent it to Summit Christian Academy for a "Teacher Appreciation" luncheon and it was a hit! My mother and I spent this past weekend (September 25-27, 2009) at the lake house in another "cooking frenzy" and this soup was first on the list! Hope you enjoy it even half as much as I do!
