Prepared pie shell (see separate recipe elsewhere in the book)
4 eggs, separated
2 tbsp softened butter
1 tbsp cider vinegar
1 1/2 c sugar
1/2 c pecans
1 tsp vanilla

Directions:
Directions:
Preheat oven to 325 degrees Fahrenheit with the rack in the center of the oven.

Combine egg yolks and butter in a bowl and beat until fluffy, then stir in the vanilla and vinegar. Add the pecans and raisins and mix.

Beat the egg whites in a clean bowl (with clean beaters) until they are foamy and soft peaks form. Fold egg whites into the mixture and pour into the prepared crust.

Bake for 50 minutes, cool, then refrigerate.

Ora Thompson was an RN who worked with mother at the hospital in the early years and later served as daddy's office nurse for many years. I've carried this recipe around since I was a teenager. I must have liked it at the time but have never made it. It's kind of like a chess pie on steroids with the raisins and pecans.
