3/4 C shortening
1 C sugar
2 eggs
1 tsp. vanilla
2 and 1/2 C flour
1 tsp baking powder
1 tsp. salt

Filling:
2 C raisins
2 C water
1/2 cup sugar
2 T. flour

Directions:
Directions:
Mix shortening, sugars and eggs. Blend in flour, baking powder and salt.
Make filling: Mix raisins water and cook for 5 minutes. Stir in 1/2 cup sugar and flour. Cook and stir until thick.
Roll out dough and cut into circles (biscuit cutter works well). Place small amount of raisin filling on each circle and top with another dough circle. Crimp edges of dough so filling does not leak. Poke cookies with fork a few times on top. Bake at 375º for 10-15 minutes or until slightly brown.
