2 pounds lean ground beef
2 eggs, beaten
1/2 cup tomato juice (or ketchup or tomato sauce)
2 tablespoons chopped parsley
2 cloves minced garlic
2 tablespoons dried or minced onions
1 t. salt
1/2 t. black pepper
1 t. Italian seasoning
dash Worcestershire
dash Tobasco sauce
3/4 cups soft bread crumbs
8 thin slices ham
6 ounces shredded mozzarella cheese

Directions:
Directions:
Combine eggs, bread crumbs, tomato juice, seasonings and garlic. Add ground meat and mix thoroughly. On foil, pat the meat mixture into a 12 x 10-inch rectangle. Arrange the ham slices on top of the meat, leaving a small margin around the edges. Sprinkle the shredded cheese evenly over the ham. Starting with the short end, roll up meat like a jelly roll using foil to lift. Discard foil and seal edges and ends by pinching meat together. Bake in a 13x9x2-inch pan, seam down. Bake at 3:50 degrees for an hour and 15 minutes or until done. Center will be pink.
