Zucchini Nut Loaf Recipe

1 1/2 C. flour
1/2 tsp. baking soda
1 C. finely shredded or (grated) unpeeled zucchini1/4 C. veg. oil
1 mashed banana
1/2 tsp. salt
1 egg
1 c. sugar
1/2 C. chopped walnuts
1 tsp. cinnamon
1/4 tsp. baking powder
1/4 tsp. finely grated lemon peel
1/4 C. chocolate chips
1/2 tsp. nutmeg
1/2 C. raisins

In a mixing bowl, stir together flour, cinnamon, baking soda, salt, nutmeg and baking powder. Set aside.
In another mixing bowl, beat together sugar,zucchini and egg. Add lemon peel and oil; mix well. Sift flour mixture into zucchini mixture. Add mashed banana. Gently fold in nuts, raisins and chocolate chips. Turn batter into a greased loaf pan. Bake in a 350 oven for 50 to 60 minutes, or until toothpick inserted near center comes out clean. Cool in pan for 10 minutes. Remove from pan; cool thoroughly on rack. Wrap and store loaf overnight before serving/

This recipe is from Tony Tablit when he used to go to a special ed. school years ago. The kids planted a garden and used the vegetables to make things with. This is delicious!!!!! For real!
